How it works?

Two things happen after a bottle of sparkling wine is opened. First, and most notably, it begins to go flat the moment the cork is removed. Second, like any wine, Champagnes will begin to suffer the ravages of oxidation after the bottle is opened and served. Perlage solves both of these problems, simply and completely.

The Perlage System works by returning the head space of the opened bottle to exactly the same composition and pressure of gasses that existed before the bottle was opened, by first purging the head space of oxygen, and then repressurizing the head space with pure carbon dioxide to the exact pressure that existed before the bottle was opened. In a sense, the bottle doesn't "know" it's been opened.

Here’s how the Perlage system is used:

1. The opened bottle is placed in the Perlage enclosure, which fits virtually all bottles on the market. The purpose of the enclosure is safety, since the bottle is returned to its original pressure, but now has a larger head space than when it was opened.

2. Air is purged from the head space of the bottle with CO2. The cap is then affixed to the top of the enclosure, sealing the top of the bottle.

3. The bottle is then pressurized with carbon dioxide—exactly what came out of the bottle when the cork was removed—to the same pressure the Champagne was originally bottled at.

The whole process takes only a few seconds.When another glass is ordered, it is not necessary to remove the bottle from the Perlage enclosure—simply remove the cap and the wine can be poured from the bottle while still in the safety shell.
